I created OCs for The Princess Mayblossom, Princess Rosette (this one I created a male OC for), Vasilisa the Beautiful, The Death of Koschei the Deathless, and The Flower Queen's Daughter (actually, I gave The Flower Queen's daughter and her prince twins - a girl for the princess and a boy for the prince). I'm working on one for Princess Belle-Etoile.
I could see Mattel doing Princess Rosette, The Blue Bird, The Princess and the Pea, Rapunzel, or The Flower Queen's Daughter (some might be a little too obscure, though). The Princess Mayblossom, Biancabella and the Snake, and the Death of Koschei are kind of violent, so Mattel probably wouldn't do them. While Princess Belle-Etoile isn't too violent, the titular princess marries her first cousin.
There's another Aimee that you forgot - Aimee from The Bee and the Orange Tree, another Madame d'Aulnoy story. The OC I'm creating for it is male. (I genderbend a lot.)
Some other princesses I can think of (some are queens, but I hope that counts too):
Unnamed Princess (The Iron Stove) - I have a male OC who is her son.
Unnamed Princess (Donkey Skin) - A classic Perrault story. It's kind of dark. Mattel wouldn't use it. One of the OCs I'm working on is her son.
Allerleirauh (Allerleirauh) - Grimms' version of the above. I have a female OC who is her daughter.
Renzolla (The Goat-faced Girl) - She's not born a princess, and technically she becomes queen after marrying. I created a male OC who is her son.
Cannetella (Cannetella) - I have a female OC who is her daughter. This story is very dark, so Mattel probably wouldn't use it.
Zayda (Alphege, or The Green Monkey) - Not born a princess either, and she gets promoted to queen after marrying Alphege. I plan on making two OCs for this story - a female OC who is the daughter of Alphege and Zayda and a male OC who is the son of Alphege's half-brother.
