There's a lot of Brothers Grimm stories with witches. Hansel and Gretel has already been used in canon, but there's also witches in Frau Trude, Mother Holle, Jorinde and Joringel, The Water Nixie, and the Nixie in the Mill-Pond . The last two have a specific type of witch called a nixie - a water-witch.
Some non-German fairy tales with witches include Esben and the Witch, The Knights of the Fish, The Old Witch, The Witch, The Witch in hte Stone Boat, Hermod and Hadvor, Buttercup, and The Jezinkas.

Honestly, I wanted a story to create a romance interest for Jacklyn, so a dragon could not work.

Faust by either Goethe, or Doctor Faustus by Marlowe has both.
St Peter in Brother Lustig is an angel. Additionally, there's a lot of stories with the Devil in other Grimm stories: like the Devil and the Peasant, Gambling Hans, and more.
There's The Angel by Andersen. There's also an angel in the Red Shoes by the same writing. I'm sure there's plenty of angels in his works but I cannot think of them.
American stories like the Devil and Daniel Webster, the Devil and Tom Walker, and the Devil Went Down to Georgia also exist.
These are just off the top of my head. What sort of "vibe" do you want?
